Well SOMEONE had to recommend a butcher, the problem in WA is becoming finding one
Last week I had to travel down to south of Rockingham for some deliveries to a client and took a mate along for the ride.
He lives on Shepperton Road in Victoria Park and on the way back wanted to do a bit of shopping so we called into a centre that most all West Australians would know, Centro on the rise on Shepperton away from the CBD.
I hadn't been there in years so I don't recall if the little butcher in the open mall section outside Woolworths is new or not but he had a damned fine selection of meat and is Halal, also the prices were fine and the cuts somewhat different.
Having a tough time even finding a butcher anywhere near where I live I had to go look and lo and behold he had my wife's favorite chicken cut, marylands and not just any marylands but very good sized ones so bought a couple, also bought myself a very nice looking porterhouse steak. I stopped at that point because I do go to this mate's place reasonably often so figured I could always come back.
Cooked the marylands the next night, they really were large, I almost split one between the two of us but we were both hungry so gave them a simple brine for a couple of hours with just some turmeric since the wife loves it so much. The first thing I noticed was they smelled very different, like the chicken my grandfather used to raise and slaughter, the wife even wondered if they were ok but the memory came back
After the brine I gave them a a good rub with rice bran oil and a healthy amount of sesame seeds and black pepper and grilled them on the Q.
They were brilliant, best chicken that I've eaten in years, we devoured them
The next night I cooked my steak, wife is not much of a red meat eater. It was a nice thick portion, very pleasant colour with healthy fat and didn't really look like it needed much messing around with so just gave it a rub with Cape Herb and Spice Texas and grilled it pretty rare, again on the Q. Damned fine steak.
I shall be going back to this butcher, also noticed he had some of the less common meats, various offal and even tongue.
It's a pity he is not in a more convenient location but not really that bad, for those who don't know Perth is a very spread out city and still extending along the coast, this guy is sort of in the middle.
