We have a company here in the States called Restaurant Depot...they cater to Restaurants and folks in the business. Have only shopped at the one in Pasadena and Las Vegas till a couple of weeks ago...went to the Alexandria. Virginia (DC) area) couple of weeks ago...I am a big fan of Costco meat, usually none finer for USDA Choice...I think this is as well a Marbled USDA Choice Rib Roast I have ever bought. Uncles return from Florida this afternoon and will have for dinner tonight. Will be curious if it is as good as it looks...It has been Wet Aged for 2 weeks + whatever time it had been in cryo before purchase...

That should be "melt in the mouth" . How are you going to cook it? I be almost inclined to cube it and grill on scewers to get maximim mallard coverage and fat softening. I see cuts like that every now and then but $$$

Uncles are big Steak eaters, so it has all been cut into steaks, vac sealed and will be grilled for dinners!
If it truly is USDA Choice...it is the best Choice I have ever eaten, had one last night and it was some fine beef!

They are awesome to smoke whole, as well. Cooker temp around 250, cook to a nice rare IT. Last one we did, pink from edge to edge.....YUM!

I'm such a recent NoR that I should maybe not have an opinion Chris, but if you wanted to do a packed lunch and come to Woodvale I THINK the butcher there would accommodate - seems to get it Regional difference though I think, US meat CAN be unreal, so can Oz, both can look great but disappoint. Cheers
