Better than 1/2 price.................
That's it, I "WILL NOT BUY" meat from Woolworths ever again.
Walked into my local today, straight down to the meat section, and there's red banners all over the place, promoting the special price on the Beef Porterhouse.
So silly here....... grabs a pack thinking, "great price" and "I am gunna test out the new Sous Vide on steak now"
I was thinking that all done right, myself and the family were going to be ion for a real treat tonight.
I made up a herbed butter to go in with the Beef
I gave it a steady 5 hours at 126F (Rare) and as per the book.....
Then meanwhile, the kettle was heated up to piping hot with CI grate in place
and these where quickly seared ever side
At the end of the day, the stock that this meat came from must have been rubbish
It was treated, handled and cooked the best way possible yet, it was still chewy tough.
I would hate to have eaten this meat at say, a Barbie at a mates place, over cooked on a flat top four burner .
Two words....... "Terrible Meat"

PS,,,,,and luckily, I am heading East on business tomorrow, and will be picking up a couple of whole Kilcoy Rumps on my way out.
Cant wait to try this quality SV style

Honestly mate I just gave up on meat of any type from Wallies ages ago, in fact I barely ever shop there now. My wife is a bit of a fiend for specials comparisons and we happen to live sort of equidistant from a Wallies, a Coles, an IGA and a Farmer Jacks but somewhat further from a decent butcher. Every week when the junk mail arrives she has a troll through and flags anything that we use at the right prices, we tend to horde a bit so less a case of what is out of stock so much as keeping the store cupboard bulging It's been well over two months since the last time there was anything on special at Wallies that was even worth the trip. Coles, not so bad, the local has an ok butcher but they are pot luck on if they have the specials in stock. IGA, well you expect to pay a little more but actually they are getting better on their specials and ours again has an ok butcher. Farmer Jacks is the pick of the crop though, their butcher in particular but also their fruit and veg - I just shake my head at things like decent field mushrooms being $12.99 a kilo everywhere else and FJ they are $4.99 and very fresh I do the shopping, she just gives me a list - partly because she is not terribly well at the moment and partly because she is a dreadful impulse shopper I'd seen those porterhouse steaks in the junk mail but remembering the last steaks from Wallies, not interested. Contrariwise had a steak from FJ just the other day, no sv or any such, just a quick pass through the Q, delicious Been following your sv adventures, I guess the real lesson is that no matter how much you try you can only make the original SO much better on the plate Cheers

Your final statement as above hits the Nail on the Head.
I guess I got false illusioned with my new SV.
Yes, it can turn a cheaper cut (Ribs, Chuck, shank, cheek etc) into a tender mouth watering experience, but cant turn a cut that is "expected" to be good, into better.
In tonights case, the "expected to be good" went to be "worse that can be expected".....
I am pretty disappointed really

SHould have worked? Im always wary of that cut full stop. Always have found them tastey but tough. Gueas who's got a 3 kg lump of Austral 1A (killcoy) 100 day grain fed scotch fillet three week wet aged ready for a weeks Holliday up at Burrum heads ,,,,, Just in case the fish or crabs don't bite

I have been eating Kilcoy rump for the last few years and it stands head and shoulders above any ive tried.
I am yet to try their Scotch, but going by how good the Rump is, I expect it to be paramount.
Be sure to post back your thought once you have tried it.........

I am true to my word, and picked up 14kgs this afternoon
Its been a while since the last batch,,,,, and we are in for a treat once I crack the first of these babies
My wholesaler is still charging me the same at $8.90/kg.
Oh,,, he too has the Kilcoy Scotch, but its considerably dearer as one would expect.......
Curious though Mick, what did you pay for yours at kg rate??

We,, I may have wires crossed, but I'm sure. I mate of mine who is a factory plant engineer came around for a beer the other day and spotted the schotch and said He was offered a job at Austral, One of the biggest meat processors in Queensland. He said that it's Kilcoy meat and some of the best I'll eat.
But my packaging does not look like your rump, Mine is plain. I just asked the missus where she got it and she said Aldi for $14.99 kg. So now I'm even more confused. It does look good though, I'm slicing it up tonight for meal size vac packing so will test some What does the fine print say on those rumps?

Just did some digging, Not the same, Yours is from Queensland and mine is from Adelaide. My mate was singing through his ass. Unless Austral have some stake in Kilcoy as that is what pricked his ears.

Austral are at Gepps Cross in Adelaide, bro of mine has some deal, he's a country boy, gets meat at wholesale sort of pre-picked on a regular basis via a farmer mate of his in the Flinders. It's bloody good beef but I'd doubt they bother to bring in meat from Qld for processing, they have their hands full processing the SA herds which include from Kangaroo Island. The movement of live cattle for processing in Australia doesn't tend to be very significant across borders apart from out of the Northern Territory where they raise more cattle than can be processed in the Territory. Some of those cattle are trucked into WA, more goes down to SA but even then depending upon meat prices the NT farmers often ship cattle out of Darwin, even via air when the price is really low to overseas markets as "hot meat." SA's beef production is, relative to the State population, quite high so more meat goes interstate than comes in. I only know all of that because I used to work for Dalgety, long time back but Dal and these days much more so Elders have a hand in most agricultural sales of livestock. Simply put it's just too expensive to truck cattle too far except through necessity. The exception might be for "gourmet" meat, but not likely to be via a wholesaler to wholesaler path, too many markups along the way. It's a rather unique situation in Australia compared to other countries, mix of distance, population densities and amounts of production. Dalgety actually never really made that much out of beef, but it was good turnover, made much more with horses, yearlings especially, those you can justify transporting and not for meat So Mick I'd wager your mate is half right, it will be good beef, but it's not from Queensland Cheers

Well, I sliced off a minute steak, then test fried on a griddle at flash sear,, Bloody beautiful so that's how I sliced up the whole lump bar the last 500 grm that I packed for a small roast. so for $45 I got Five meals for the four of us , Steak sangers here I come . So for those on the East coast if you spot this meat in Aldi, I ts worth the dollars and is beautiful tender and flavoursome.

Very disappointing Shayne going to all that effort. I guess a bad one can happen from anybody. Good thing you didn't pay for the whole thing to be cutup!
Kilcoy looks like a good lead Smokey.
Super-butcher down here had wagyu rump last week for $20 so bought 2 whole. The first was almost a no knife job on the chew. CS
